Bella is Italian for beautiful, and this recipe brings beauty and flavor to your mouth and your meal. It is also quick and nutritious, an added bonus! These mushrooms are hearty enough to be used in sandwiches or topped on a salad.

If you feel cooking is stressful or too much work, choose recipes like this that can be prepared in less than 30 minutes. This creates space for you to slow down and nourish your soul by being present while you cook. This brings in a creative and spiritual aspect to your experience.
  • Enjoy the crazy design on the underside of the mushrooms. 
  • Feel the firmness of it.
  • Notice that it becomes more delicate and supple after being baked.
  • Take note that the flavors are enhanced through the heat.

This is another life lesson - we are enriched by going through the refiner's fire. What we see as hardship often enhances our greatness. Enjoy the alchemy of the seasoning that melds into a magical juicy sauce that begs to be soaked up with a crusty piece of bread.

Ingredients 
  • 2 large portabella mushrooms, cut into one inch thick strips
  • 2 Tbsp olive oil
  • 2 Tbsp shoyu *may replace with amino acids or tamari sauce
  • 1 Tbsp red wine vinegar
  • 2 tsp granulated garlic
  • 2 Tbsp brown sugar
  • 1 tsp smoked paprika
  • ¼ tsp kosher salt
Directions  
  • Preheat oven to 400 degrees
  • Mix together the wet ingredients in a  medium bowl
  • Mix together the dry ingredients in a medium bowl
  • Toss the mushrooms in the wet mixture
  • Then toss the mushrooms in the dry mixture
  • Bake 10-15 minutes on a foil lined baking sheet 
  • Serve hot
  • Optional -top with mozzarella cheese and make into a delicious ciabatta sandwich
