When I was little, I didn’t like vegetables. They were “healthy” and good for you, but I don’t remember them tasting good - like spinach or green beans.
I recently took a cooking class that offered a “healthy” recipe that not only tasted good, it blew my taste buds away! It was hearty, satisfying and a joy to eat. I’ve learned to prepare spinach and green beans in a way that they are delicious just by adding the right spices. For example, I lightly stir fry green beans in a little butter and smoked salt. It’s important not to over cook it so that it stays crisp -It’s amazing! For the Sweet Potato Preheat the oven to 425 degrees. Line a sheet tray with parchment paper. Dice sweet potatoes in half inch cubes and toss with oil, salt, pepper, and curry powder. Bake for about 35-40 minutes, flipping once halfway through, until tender and charring. For the Quinoa Cook quinoa according to package instructions. Combine the quinoa and liquid in a medium pot and bring to a boil. Reduce to a simmer and cover until the liquid has been absorbed (about 15 minutes). I use chicken broth instead of water, or you can use vegetable broth. For the Dressing In a food processor combine all the ingredients. If the mixture is too thick, add water to thin. Taste for seasoning and adjust salt/pepper accordingly. To Assemble In a large salad bowl, toss the lettuce with enough dressing to coat. Top with the cooked grain, roasted sweet potato, sliced avocado, and cheese. Season with a pinch of salt and pepper and extra drizzle of dressing-enjoy!

I just went “foraging” through my fridge. The definition of forage is to search over an area in order to obtain something, especially food. I have a LOT of stuff in my fridge. I cook a lot, so things tend to get pushed to the back and I forget about them. So, it’s actually kind of fun digging through my fridge to see what I can find.
I knew I had some goat cheese in there that needed to be eaten, as well as some cream cheese that had been in there for a while. The idea popped in my head to make a dip with the cheeses by adding some chipotle tabasco sauce and jam. I had so much fun, and it came out great! Both my husband and I loved it! I LOVE putting a spiritual spin on things. Here’s what I came up with from this scenario. We all have ingredients within ourselves (gifts, skills, talents, and experiences) that sometimes get pushed to the back and forgotten. Sometimes you have to dig deep - go all the way to the back, open up things that aren’t initially recognized, to find that tucked away gem that is an answer to prayer, or something that can be used to improve a part of your life. I spent many hours and many weeks writing and rewriting the class. The format was new to me and there was a certain level of tech skills that were expected. When I agreed to do the class, I wasn’t aware of the specific format that was going to be requested or that I was expected to know how to provide slides during my presentation. This created a lot of anxiety and scared the crap out of me! Nevertheless, I accepted the challenge and worked very hard to create good content. My sister is my tech angel and helps me through my learning curve. Thank God for LaVerna!
Many of the Presenters were very articulate and polished. It was evident they had lots of experience teaching online and had the tech skills that I aspire to have. I decided that I was going to be my authentic self, and teach from the heart, and I did. I provide “live props” instead of slides for 99% of the class. I did my best. It wasn’t perfect, but I got in some really good practice! Taking the leap of faith required to do the work I feel called to do has been challenging and scary. But I know growth can only occur outside my comfort zone, so I keep moving forward. I’ve been doing a lot of growth during these last 2 years since I retired early from my job of almost 30 years. I had hoped I’d be so much further along than I am. One of the hardest things is to give myself grace. If you are growing outside of your comfort zone, take heart. It will get better. YOU will get better. Be kind to yourself. Congratulate yourself on what you have accomplished so far. Know that it IS and will continue to be worth it. Remember that there is NO ONE else, in the entire Universe just like you. You have a unique gift that only you can offer the world. Frequency has 2 meanings:
Wow. I want to focus on that second definition! There is so much to explore and ponder. We are all transmitters and receivers of frequency and vibration. Each frequency carries an energy to it, positive or negative. We each control what we emit. Oprah had a sign on her Harpo Office that said “Be aware of the energy you bring into the room”. I translate that as - take a moment to touch base with how you are feeling. If I am angry, or frustrated, or discouraged, I am emitting that frequency or vibe. We are responsible for the way we feel - it’s a choice. There are things we can do to change our mood. Tony Robbins has a cool exercise called priming. It’s a 10 minute exercise where you use movement, breath, and thoughts to evoke a high frequency of good vibrations like love and gratitude. Check it out! I monitor my feelings and if they are of a lower frequency, I use music, dance, or laughter, to elevate my vibration, and thus my emotion. Like the Beach Boys song, may we each send out “good, good, good, good vibrations” and live a vibrant life. |
