There are certain recipes that are built around family and tradition. Whenever my Mom made this, it was a special occasion. Mom is gone now, but every time I eat this, I think of, and celebrate her. If you don’t have any family traditions around food, I strongly suggest you start one. The only criteria is that it’s delicious and makes people want to gather around the table through the decades.
The life lesson taught in this recipe is the paradox of the necessity of opposites. You must know sorrow in order to experience joy. You can’t truly enjoy something crispy, without having had something soft. This chicken blesses you with both textures - crispy on the outside and tender on the inside. It’s so ‘ono on so many levels! When life serves you sorrow, see the gift in it. It will make your joy even sweeter, just like the ice-cold water in the batter makes this chicken even better. It is a must for your next family gathering. Mom's Crispy Korean Chicken.pdf
